Lettuce
- This leaf vegetable has several harvest times starting in May and ending in October.
- The lettuce is usualy given to the dining halls, if dining cannot use it, it will be sent to Amherst Survival Center.
Beets
- Beets are both an edible root vegetable and an edible leaf vegetable.
- Beets have a harvest season from June through October.
- Beets are also usually given to the dining halls, if dining cannot use them they will be sent to Amherst Survival Center.
Carrots
- This root vegetable has a harvest season from July through November.
- Carrots are also usually given to the dining halls, if dining cannot use them they will be sent to Amherst Survival Center.
Cucamelons
- Cucamelons are sometimes called "Mexican miniature watermelons." These flowering plants are grown for their edible fruit which are approximately the size of grapes and taste more like sour cucumbers than watermelons.
- Cucamelons are ready to be harvested in August through October.
- This is the first season that cucamelons will be grown in our garden
- Although we are still figuring out what we want to do with them, cucamelons make fantastic pickles which we are potentially considering to offer at the farmers market.
